What is jay (เจ) food? Thailand's Buddhist vegan tradition, explained

If you've walked a Bangkok market street you've seen them: yellow flags with a red character that looks like เจ. That's jay (also spelled jeh or je), and it marks food prepared to a Chinese-Thai Buddhist standard that's stricter than Western veganism in some ways.

Jay food contains no meat, seafood, dairy or eggs — and additionally no garlic, onions, chives, leeks or strong spices, which tradition holds inflame the passions. Many jay kitchens also keep separate cookware. What you get is deeply savoury Thai-Chinese cooking built on tofu, mushrooms, gourds, mock meats and rice — at street-food prices.

For travelling vegans, jay restaurants are a superpower: the label does the explaining for you. A few caveats: some jay places are vegetarian-plus rather than strictly vegan during non-festival months, and oyster sauce occasionally sneaks into 'mangsawirat' (มังสวิรัติ, vegetarian) places — but a yellow เจ flag is the strongest signal you'll find.
